- 1 cup of Salad lentil (French, Spanish or Mt Black)
- 1/2 cup of quinoa
- 1 mango diced or (1 can sliced) extra if desired
- Juice of 1 lime – extra for taste
- Soaked lentils in boiled water for 10-15.
Cook quoina for 15mins until soft
- Combined cooked lentils & quoina with diced red onion, decide red chilli, decide mango, shredded coriander, zest of lime & juice of lime.
- Serve cold or warm. Eat alone or served under as bed under chicken, turkey or salmon.
