Roasted Vegetable Sandwich

Preparation time:  5 minutes

Ingredients:

  •  2 slices of whole grain bread
  •  Leftover roast pumpkin
  •  2 cheese slices
  •  Handful of lettuce

Method:

  1. Mash leftover roast pumpkin on one slice of bread.
  2. Add cheese slices and lettuce and top with the other slice of bread.
