BLT Sandwich with Tempeh Bacon

If your child is learning from home, you might find it difficult to maintain your normal routine. One way to help stick to a routine is to prepare their lunch and snacks the evening beforehand so that it’s all packed and ready to go. Sandwiches are a great and convenient lunch option that can be prepared beforehand and stored in the fridge, like this BLT sandwich made with tempeh bacon!

Recipe

Serves: 1

Preparation time: 20 minutes

Cook time: 10 minutes

Ingredients

  • 85g tempeh
  • 2 tbsp soy sauce
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 1 tbsp mayo
  • 2 lettuce leaves
  • 3 slices tomato
  • 2 slices wholegrain or wholemeal bread

Method

  1. Preheat oven to 200 degrees Celsius
  2. Cut tempeh into strips
  3. In a small container, mix together soy sauce, smoked paprika, cayenne pepper
  4. Add tempeh to small container so that it’s coated in the marinade
  5. Let sit for 15 minutes to marinate
  6. Add tempeh to a baking tray lined with parchment paper
  7. Bake for 10 minutes
  8. Spread mayo on one slice of bread
  9. Top with tempeh bacon, lettuce, and tomato
  10. Complete by topping with second slice of bread. Enjoy!
