Mediterranean Roll

Serves: 1

Preparation time:  5 minutes

Ingredients:

  • 1 x grainy roll
  • Grilled chicken, sliced
  • Handful baby cos lettuce
  • 1 tomato
  • 1 medium cucumber
  • Hummus

Method:

  1. Spread hummus on base of roll.
  2. Layer ½ baby cos lettuce over hummus.
  3. Add sliced chicken.
  4. Top with sliced tomatoes and cucumbers.
  5. Add the remainder of the lettuce and enjoy!

Tip:

To make it veggie, simply use sliced cooked falafel instead of the chicken.
