Preparation time: 5 minutes
- 2 slices Bürgen® Soy-Lin® bread, toasted
- ¼ (70g) medium avocado
- 1 tsp lemon juice
- Freshly ground black pepper
- ½ stick (50g) celery, sliced finely
- ¼ cup (10g) mizuna leaves
- 30g feta, crumbled
- 10 small basil leaves, to garnish
- Put the avocado into a bowl and mash with a fork. Add the lemon juice and season generously with freshly ground black pepper. Stir to combine.
- Spread the avocado over the toasted bread and top with the celery, salad leaves and feta. Garnish with basil leaves.
