Plus, it’s super easy with no cooking required! Instead, just cut up fresh vegetables and add spices. Squeeze on some lime and you’ll be up and ready to go!

Ingredients
- 2 slices Bakers Delight Chia Omega-3 Wholemeal Loaf or Bakers Delight Hi-FIbre Lo-GI Wholemeal Block Loaf
- ½ Avocado
- 2 tablespoons corn kernels
- ⅓ cucumber, chopped
- ½ tomato, diced
- 1 tablespoon coriander, roughly chopped
- 2 slices red onion, finely diced
- 1 tablespoon black beans
- Chilli flakes, optional
- Salt and pepper
- Lime
Method
- Dice the tomato, cucumber, and avocado. Add to bowl.
- Toast the bread.
- Add 2 tbsp of corn kernels, rinsed black beans, squeeze of lime and salt and pepper to taste.
- Mix together and add on top of toast.
