Green Genius Breakfast Bowl

We all know breakfast is the most important meal of the day, so start your day the right way with this healthy breakfast bowl!

Ingredients

Method

  1. Add 1/2 cup of uncooked quinoa and 1 cup of water and bring to a boil over medium-high heat, then lower the heat to a simmer and pop the lid on.
  2. Bring water to a boil in a saucepan, then reduce to a medium simmer. Gently lower 1 egg and cook for 5-7 minutes depending on how runny you like your yolks.
  3. Dice herbs and onion, toast bread and cut into croutons.
  4. Add cooked quinoa to bowl and layer the rest of the ingredients, adding sliced boiled egg once cooked. Crumble fetta onto the top and season with salt and pepper and a drizzle of olive oil.
