Apple, Fig and Almond Bircher

Serves: 1 | Total Time: 5 mins, plus 1 hour soaking time

Ingredients

  • 1 apple
  • 35g BARLEYMAX Super Barley Toasted Flakes
  • 1 tbsp rolled oats
  • 1 tbsp shredded coconut
  • ½ tsp cinnamon
  • 1 tsp honey
  • ½ cup milk of choice
  • 2 tbsp vanilla yoghurt (plus 1 tbsp to serve)
  • 1 tbsp almonds, chopped
  • 1 fig, halved

Method

  1. Grate half the apple apple. Add the grated apple, Super Barley flakes, milk, yoghurt, honey and cinnamon to a small bowl and mix well to combine. Cover and refrigerate for 1 hour or overnight
  2. To serve, slice the other half of the apple, fig, almonds, yoghurt and a dash of cinnamon. Enjoy!
