Gut-Loving Granola

Serves: 12 | Prep Time: 15 mins | Cook Time: 30 mins

Ingredients

  • 350g BARLEYMAX® Super Barley Flakes
  • ¾ cup pepitas
  • ¾ cup slivered almonds
  • ¾ cup shaved coconut
  • ½ cup extra virgin olive oil
  • ⅓ cup golden syrup
  • ½ tsp ground ginger
  • 1 tsp vanilla extract
  • 1 cup dried cranberries

Method

  1. Preheat the oven to 150°C. Line a baking tray with baking paper.
  2. Add the Original Flakes, pepitas, almonds and coconut to a mixing bowl.
  3. Mix the oil, golden syrup, ginger, and vanilla extract in a small pot over medium-high heat. Once it starts to boil, remove the pot from the heat, pour the liquid over the dry ingredients, and combine.
  4. Place the baking tray in the oven and bake for 25 minutes.
  5. Allow the granola to cool for 5 minutes, and then stir in the cranberries.
  6. Let the granola cool completely on the baking tray before serving.
