Smashed Broad Bean and Avo Toast

Total Time: 10 minutes | Serves: 4

Ingredients

  • 250g frozen Heinz® Broad Beans
  • 1 ripe avocado
  • Juice from ½ lemon to taste
  • Toasted sourdough
  • Your favourite toppings to serve, like:
    • Creamy feta
    • Fresh mint leaves
    • Fresh dill
    • Soft boiled eggs
    • Freshly chopped chilli
    • Cherry tomatoes
    • Basil

Method

  1. Plunge the Heinz Broad Beans into boiling water. Return to the boil and then simmer for 2 minutes. Drain and rinse in cold water. Squeeze the small green beans from their skins, discarding the skins.
  2. Mash the beans with a fork. Mash the flesh of the avocado with a fork and add to the broad beans with the lemon juice. Mix well and season with black pepper.
  3. Serve on top of toasted sourdough slices with your favourite toppings.
