A deliciously beany twist on a favourite dish.
Serves: 2 | Total Time: 15 mins
Ingredients:
- 1 tbsp olive oil
- 1 red onion, peeled & diced
- 1 red capsicum, deseeded & diced
- 1 long red banana chilli, deseeded & chopped
- 1 clove garlic, crushed
- ½ tsp smoked paprika
- 300g can Heinz Beanz peri-peri flavour
- 4 free-range eggs
- Fresh coriander or parsley leaves, chopped
- Lemon wedges and flatbread, to serve
Method:
- Heat the oil in a non-stick frying pan with a lid. Add the onion, capsicum and chilli and cook uncovered for 5 minutes, until lightly caramelised. Add the garlic and paprika, cooking for 1 minute, or until fragrant.
- Stir in the Heinz Beanz Peri-Peri Flavour, then turn the heat to low. Make 4 small hollows in the bean mixture and gently crack an egg into each hollow. You can crack the eggs into a small bowl first, then ease each into the pan.
- Cover the pan and simmer gently for 5-6 minutes, or bake in the oven until the eggs are cooked to your liking. Remove from the heat and sprinkle with fresh herbs. Serve eggs with flatbread and a good squeeze of fresh lemon juice.
