Hummus Bowl with Garlic Herb Toast

Ingredients

For the bowl:

  • 2 tbsp hummus
  • 6–8 cherry tomatoes, halved (mix of red and yellow)
  • ¼ red capsicum, finely diced
  • ¼ cup roasted chickpeas (or canned chickpeas, drained and pan-roasted)
  • ¼ cup cooked quinoa (or a mix of quinoa and brown rice)
  • ½ cup baby spinach or rocket, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp red onion, finely diced
  • A squeeze of lemon juice
  • Olive oil, to drizzle
  • Pepper, to taste

For garlic herb toast:

  • 2 slices Tip Top 9 Grain Classic or Wholemeal
  • 1 tsp butter
  • ½ clove garlic, minced
  • 1 tsp chopped parsley
  • A small pinch of salt

Method

  1. Mix butter, garlic, parsley, and salt in a small bowl.
  2. Spread evenly over the bread slices.
  3. Toast in a pan or under the grill until golden and crispy. Cut into triangles.
  4. Arrange tomatoes, capsicum, chickpeas, quinoa or rice mix, spinach, parsley, and onion in neat sections.
  5. Drizzle with olive oil and lemon juice. Season with pepper.
