Ingredients
For the bowl:
- 2 tbsp hummus
- 6–8 cherry tomatoes, halved (mix of red and yellow)
- ¼ red capsicum, finely diced
- ¼ cup roasted chickpeas (or canned chickpeas, drained and pan-roasted)
- ¼ cup cooked quinoa (or a mix of quinoa and brown rice)
- ½ cup baby spinach or rocket, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp red onion, finely diced
- A squeeze of lemon juice
- Olive oil, to drizzle
- Pepper, to taste
For garlic herb toast:
- 2 slices Tip Top 9 Grain Classic or Wholemeal
- 1 tsp butter
- ½ clove garlic, minced
- 1 tsp chopped parsley
- A small pinch of salt
Method
- Mix butter, garlic, parsley, and salt in a small bowl.
- Spread evenly over the bread slices.
- Toast in a pan or under the grill until golden and crispy. Cut into triangles.
- Arrange tomatoes, capsicum, chickpeas, quinoa or rice mix, spinach, parsley, and onion in neat sections.
- Drizzle with olive oil and lemon juice. Season with pepper.
