Smashed Avocado with Feta, Celery, Mizuna & Baby Basil Leaves

  • 2 slices Bürgen® Soy-Lin® bread, toasted
  • ¼ (70g) medium avocado
  • 1 tsp lemon juice
  • Freshly ground black pepper
  • ½ stick (50g) celery, sliced finely
  • ¼ cup (10g) mizuna leaves
  • 30g feta, crumbled
  • 10 small basil leaves, to garnish


  1. Put the avocado into a bowl and mash with a fork. Add the lemon juice and season generously with freshly ground black pepper. Stir to combine.
  2. Spread the avocado over the toasted bread and top with the celery, salad leaves and feta. Garnish with basil leaves.
