Ingredients
- 12 Medjool dates, pitted
- 1 cup BARLEYMAX® Super Barley Toasted Flakes
- 1 tsp vanilla extract
- ½ cup pepitas
- 2 tbsp cocoa powder
- ½ cup desiccated coconut
Method
- Blitz dates, BARLEYMAX® Super Barley Toasted Flakes, vanilla extract, pepitas and cocoa powder in a food processor till the mixture resembles fine crumbs.
- Shape mixture into balls.
- Roll in coconut until well coated.
