Hummus
Ingredients
- 400g can chickpeas, rinsed & drained
- 2 tbsp tahini
- 1 small clove garlic
- ¼ cup lemon juice
- 1 tbsp extra virgin olive oil
- 1-2 tbsp water
Method
- Place all ingredients in a blender or food processer & blend until smooth.
Sweet Potato Hummus
Ingredients
- ⅔ cup hummus (recipe above)
- 1 cup mashed sweet potato
Method
- Combine hummus and sweet potato in a medium bowl and stir to combine.
Whipped Feta
Ingredients
- 250g feta cheese
- ¾ cup reduced-fat plain Greek-style yoghurt
- Black pepper, to taste
Method
- Place all ingredients in a blender or food processer and pulse until combined.
