Ingredients
- 1 small carrot, peeled & grated
- ½ small fresh beetroot, peeled & grated
- 4 Vita-Weat
- ½ cup cottage cheese
- ¼ cup roasted pepitas (pumpkin seeds)
Method
- Combine grated carrot & beetroot in a small bowl.
- Spread cottage cheese on each Vita-Weat. Top with carrot & beetroot mix and roasted pepitas.
