Vita-Weat with Beetroot, Carrot and Pepitas

Ingredients

  • 1 small carrot, peeled & grated
  • ½ small fresh beetroot, peeled & grated
  • 4 Vita-Weat
  • ½ cup cottage cheese
  • ¼ cup roasted pepitas (pumpkin seeds)

Method

  1. Combine grated carrot & beetroot in a small bowl.
  2. Spread cottage cheese on each Vita-Weat. Top with carrot & beetroot mix and roasted pepitas.
