This awesome meat-free meal, using canned items and pantry staples, will quickly become a firm family favourite. This sauce is so versatile and is proper comfort food, full of fibre and protein. Serve over pasta, oven baked potatoes, in a vegetarian shepherds pie or simply over toast.

Ingredients
- 1 tablespoon olive oil
- 1 brown onion, diced
- 2 garlic cloves, crushed
- 1 1/2 teaspoons curry powder
- 400g can diced tomatoes
- 400g can brown lentils, rinsed and drained
Method
- Heat oil in a saucepan. Add onion and sauté until translucent. Add garlic and curry powder, sauté for 1 minute.
- Add tomatoes and lentils. Bring to boil, reduce heat and simmer for 5 minutes or until the sauce has thickened.
