Supergrain Burgers

a simple and delicious veggie quinoa burger served with whole grain rolls and salad from mckenzies foods

Ingredients

  • 2 cups water
  • 1 cup McKenzie’s White Quinoa
  • 20g butter
  • 1 leek, halved and thinly sliced
  • 200g feta, crumbled
  • 1/2 cup plain flour
  • 1 lemon, rind finely grated
  • 2 eggs, lightly whisked
  • 8 whole grain rolls
  • 1/2 lettuce, shredded
  • 3 tomatoes, sliced
  • 1/2 cucumber, sliced
  • 1 red onion, sliced
  • 2 tablespoons dijon mustard
  • 2 tablespoons tomato sauce

Method

  1. Prepare quinoa as per packet instructions.
  2. Heat the butter in a frying pan over medium heat. Stir the leek for 3 minutes or until soft. Transfer to a bowl. Add the quinoa, feta, flour, lemon rind and egg and mix until well combined. Season to taste.
  3. Shape 4 tablespoons of the mixture into patties. Add 1 tbsp olive oil to a heavy based saucepan or wok. Heat over medium-high heat. Cook patties in batches, for 2 minutes on each side or until golden. Transfer to a baking tray lined with paper towel. Cover with foil to keep warm before serving.
  4. Assemble burgers with the whole grain rolls and salad and enjoy.
