Beetroot, Feta and Lentil Salad

Total Time: 15 minutes | Serves: 6

Ingredients

  • 2x cans Golden Circle® Diced Beetroot 450g
  • 400 g can lentils, drained
  • 1 small red onion, finely diced
  • 1/2 punnet cherry tomatoes, halved
  • 1/4-1/2 cup honey mustard dressing
  • 50 g traditional feta, crumbled
  • Salad leaves

Method

  1. Drain the cans of Golden Circle Diced Beetroot and place beetroot pieces into a bowl.
  2. Add the drained lentils, red onion and cherry tomatoes.
  3. Mix through dressing.
  4. Place the salad leaves on a serving platter. Spoon over the salad.
  5. Just before serving scatter over the crumbled feta and lightly toss into the salad.
