Tuna Salad Sandwich on Spelt Bread

Ingredients

  • 2 slices of Laucke Spelt Bread made with Laucke Spelt Bread Mix 500g
  • 1 can of tuna in olive oil
  • 1 x handful of shredded red cabbage + carrot
  • Rocket
  • Parsley (optional)
  • 1 tsp aioli

Method

  1. Bake the Laucke Spelt bread following the on-pack instructions. Bread dough can be prepared in a bread machine, in a dough mixer or by hand. Use 2 freshly baked slices for this sandwich.
  2. Drain the tuna, mash with a fork and spread over one slice of the bread.
  3. Layer a handful of carrot and cabbage on top and add rocket.
  4. Add coriander if desired.
  5. Drizzle salad with aioli and enjoy!
