Tuna & Rainbow Slaw Sandwich

Preparation time:  5 minutes


  • 2 x slices wholemeal or whole grain bread
  • 1 x can of tuna in olive oil
  • 1 x handful of shredded red cabbage + carrot
  • Rocket
  • Parsley (optional)
  • 1 x tsp aioli


  1. Drain the tuna, mash with a fork and spread over one slice of the bread.
  2. Layer a handful of carrot and cabbage on top and add rocket.
  3. Add coriander if desired.
  4. Drizzle salad with aoli and enjoy!
