Apple & Walnut Baked Oatmeal Bars

Apple & Walnut Baked Oatmeal

These apple and walnut oatmeal bars are the perfect picnic snack to take on your next adventure in the sun. Pack for a picnic or in your backpack for hike, they will give you the extra energy you need. If you’re preparing this for a dessert at home, you can pair it with your favourite vegan ice-cream for an extra little treat.

Prep Time:  10 minutes

Cooking Time: 40 minutes

Serve: 6

Ingredients

  • 2 cups GF oats
  • 2 tbsp ground flaxseeds
  • 1 cup walnuts, chopped
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 1 large pinch salt
  • 1 apple, diced
  • ½ cup stewed apple sauce (homemade)
  • ½ cup oat milk
  • 2 eggs
  • ¼ cup maple syrup
  • 1 tsp vanilla paste
  • ¼ tsp almond extract
  • ¼ cup coconut oil, melted

 

Method

  1. Preheat the oven to 180C.
  2. In a large bowl mix oats, flaxseeds, walnuts, cinnamon, ginger, nutmeg and salt.
  3. Add apples, stewed apple, oat milk, eggs, maple syrup, vanilla, almond extract and coconut oil.
  4. Pour the mixture evenly into coconut oil greased baking dish and bake for 30-40 minutes or until golden brown.
  5. Sprinkle top with cinnamon, nutmeg and salt. Cut in to bite sized portions.
