These apple and walnut oatmeal bars are the perfect picnic snack to take on your next adventure in the sun. Pack for a picnic or in your backpack for hike, they will give you the extra energy you need. If you’re preparing this for a dessert at home, you can pair it with your favourite vegan ice-cream for an extra little treat.

Ingredients
- 2 cups GF oats
- 2 tbsp ground flaxseeds
- 1 cup walnuts, chopped
- 1 tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- 1 large pinch salt
- 1 apple, diced
- ½ cup stewed apple sauce (homemade)
- ½ cup oat milk
- 2 eggs
- ¼ cup maple syrup
- 1 tsp vanilla paste
- ¼ tsp almond extract
- ¼ cup coconut oil, melted
Method
- Preheat the oven to 180C.
- In a large bowl mix oats, flaxseeds, walnuts, cinnamon, ginger, nutmeg and salt.
- Add apples, stewed apple, oat milk, eggs, maple syrup, vanilla, almond extract and coconut oil.
- Pour the mixture evenly into coconut oil greased baking dish and bake for 30-40 minutes or until golden brown.
- Sprinkle top with cinnamon, nutmeg and salt. Cut in to bite sized portions.
