Christmas Energy Balls

Ingredients

Optional: chocolate chips, protein powder, honey/syrup (go half and half with the coconut oil), dried fruits and chopped nuts

Method
  1. Blend 1 cup of dates until smooth.
  2. Add muesli, coconut oil, and any optional ingredients and blend on high until the mixture is crumbly but binds together when pressed.
  3. Form your mixture into balls and serve them as is, or roll them in chopped nuts or shredded coconut.

Super easy! If you find your balls are a little too crumbly, simply pop them back into the blender with a little more oil or honey and pulse until things come together to your preferred consistency. These fantastic healthy treats will keep in the fridge for 3-4 days, and can be prepared and frozen in advance; simply take them out and defrost them a few hours before serving! Serving suggestions: these Christmas Balls make excellent protein-packed lunchbox snacks, as well as delicious bites for hungry guests. Try them with a yoghurt bowl or some fresh fruit.
