One way to help stick to a routine is to prepare their lunch and snacks the evening beforehand so that it’s all packed and ready to go. Sandwiches are a great and convenient lunch option that can be prepared beforehand and stored in the fridge, like this BLT sandwich made with tempeh bacon!

Cook time: 10 minutes
Ingredients
- 85g tempeh
- 2 tbsp soy sauce
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- 1 tbsp mayo
- 2 lettuce leaves
- 3 slices tomato
- 2 slices wholegrain or wholemeal bread
Method
- Preheat oven to 200 degrees Celsius
- Cut tempeh into strips
- In a small container, mix together soy sauce, smoked paprika, cayenne pepper
- Add tempeh to small container so that it’s coated in the marinade
- Let sit for 15 minutes to marinate
- Add tempeh to a baking tray lined with parchment paper
- Bake for 10 minutes
- Spread mayo on one slice of bread
- Top with tempeh bacon, lettuce, and tomato
- Complete by topping with second slice of bread. Enjoy!
