Italian Roasted Vegetable Sandwich

Choosing wholegrain bread can be tricky, since the amount of wholegrain isn’t listed on the nutrition panel. However, here are some tips for choosing breads high in wholegrain:

  • Look for claims such as “high in whole grains” or “very high in whole grains”
  • Be mindful that breads marketed as “multigrain” or “made with whole grains” don’t necessarily mean they are high in whole grains
  • The colour of the bread can sometimes be misleading too, but check the ingredients for words like “whole wheat flour” rather than “wheat flour”

Try using wholegrain bread to make this Italian roasted vegetable sandwich with hummus pesto, cheese, and rocket!

Serves: 1

Preparation time: 25 minutes

Ingredients:

  • 1 tbsp pesto
  • 1 tbsp hummus
  • 2 slices of eggplant
  • ¼ zucchini
  • ¼ red capsicum
  • 1 tbsp olive oil
  • All-purpose seasoning, to taste
  • ¼ cup spinach
  • 1 slice cheese
  • 2 slices whole grain or wholemeal bread

Instructions:

  1. Preheat oven to 180 degrees Celsius
  2. Slice eggplant, zucchini, and capsicum
  3. Salt eggplant and let sit for 10 minutes
  4. Dry off eggplant with paper towel to soak up moisture
  5. Season vegetables with olive oil and all-purpose seasoning
  6. Add vegetables to a baking tray lined with parchment paper
  7. Bake vegetables for 15 minutes
  8. Mix pesto and hummus together in a small bowl
  9. Spread pesto hummus mixture on both slices of bread
  10. Layer roasted vegetables on one slice of bread
  11. Top with cheese and spinach
  12. Complete with second slice of bread and enjoy!
