Slow-Cooked Chicken and Lentil Curry

Savour the rich flavours of a wholesome slow-cooked chicken and lentil curry, brimming with tender chicken, protein-packed lentils, salt-reduced stock and aromatic spices.

  • 1 tbs olive oil
  • 1 kg chicken drumsticks
  • 1 brown onion, chopped finely
  • 3 cloves garlic, finely chopped
  • 2 tsp curry powder
  • 400g sweet potato, cut into 3 cm cubes
  • 1 litre Campbell’s Real Stock – Salt-Reduced Chicken
  • 1 ¾ cups red lentils, rinsed
  • 50g baby spinach leaves


  1. Heat oil in a large frying pan on high. Cook chicken for 4-5 mins, turning until golden. Transfer to a 4.5L (18-cup) slow cooker.
  2. Cook onion and garlic for 3-4 minutes until softened. Add curry powder and cook for 1 minute until fragrant. Add to slow cooker with sweet potato, Campbell’s Salt-Reduced Real Stock and lentils.
  3. Cook on high for 3 hrs (or 6 hrs on low) until lentils soften. Stir through spinach and season to taste.
