Ingredients
- 3 cans cannellini beans, drained and rinsed
- 1 tbsp extra virgin olive oil
- 1 brown onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 3 sticks celery, diced
- 3 cups kale, chopped
- 1L salt reduced vegetable stock
- 1 tbsp white wine vinegar
- ½ cup risoni pasta
- ¼ cup parsley, chopped
- Salt and pepper, to taste
Method
- Combine one can of drained cannellini beans in a blender or food processor with ½ cup of stock. Blend until smooth and set aside.
- Heat olive oil in a large saucepan over medium heat. Once the oil is hot, add onion and cook for 3 minutes.
- Add garlic, carrot, celery and kale. Cook for 4 minutes, stirring occasionally.
- Add stock, 1½ cups water and vinegar and bring to a boil.
- Add risoni and cook for 5 minutes.
- Add cannellini beans, parsley and blended beans. Season with salt and pepper. Simmer over medium heat for 6 minutes uncovered.
