Kale & Cannellini Bean Soup

  • 3 cans cannellini beans, drained and rinsed
  • 1 tbsp extra virgin olive oil
  • 1 brown onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 3 sticks celery, diced
  • 3 cups kale, chopped
  • 1L salt reduced vegetable stock
  • 1 tbsp white wine vinegar
  • ½ cup risoni pasta
  • ¼ cup parsley, chopped
  • Salt and pepper, to taste


  1. Combine one can of drained cannellini beans in a blender or food processor with ½ cup of stock. Blend until smooth and set aside.
  2. Heat olive oil in a large saucepan over medium heat. Once the oil is hot, add onion and cook for 3 minutes.
  3. Add garlic, carrot, celery and kale. Cook for 4 minutes, stirring occasionally.
  4. Add stock, 1½ cups water and vinegar and bring to a boil.
  5. Add risoni and cook for 5 minutes.
  6. Add cannellini beans, parsley and blended beans. Season with salt and pepper. Simmer over medium heat for 6 minutes uncovered.
