Cowboy Caviar Salad Recipe

Salad Ingredients

  • 100g green capsicum
  • 180g red capsicum
  • 125g red onion
  • 300g canned corn kernels
  • 400g canned black beans
  • 140g canned chickpeas with vinaigrette flavouring
  • Small bunch (20 leaves) coriander

Dressing Ingredients

  • ¼ cup Extra Virgin Olive Oil
  • 1 lime
  • 1 tbsp red wine vinegar
  • Salt and pepper

To serve

  • Corn chips


  1. Finely dice the green capsicum, red capsicum and red onion into small pieces (2xm x 2cm). Finely chop the coriander leaves.
  2. Into a large bowl combine all the ingredients for the salad.
  3. To make the dressing, in a small bowl combine all ingredients for the dressing and stir together.
  4. Pour the dressing over the salad and mix together until all the ingredients are evenly dispersed and you’re left with a bright and colourful salad. This salad goes perfect as a side or is a delicious salsa served with corn chips. Enjoy!
