Salad Ingredients
- 100g green capsicum
- 180g red capsicum
- 125g red onion
- 300g canned corn kernels
- 400g canned black beans
- 140g canned chickpeas with vinaigrette flavouring
- Small bunch (20 leaves) coriander
Dressing Ingredients
- ¼ cup Extra Virgin Olive Oil
- 1 lime
- 1 tbsp red wine vinegar
- Salt and pepper
To serve
- Corn chips
Method
- Finely dice the green capsicum, red capsicum and red onion into small pieces (2xm x 2cm). Finely chop the coriander leaves.
- Into a large bowl combine all the ingredients for the salad.
- To make the dressing, in a small bowl combine all ingredients for the dressing and stir together.
- Pour the dressing over the salad and mix together until all the ingredients are evenly dispersed and you’re left with a bright and colourful salad. This salad goes perfect as a side or is a delicious salsa served with corn chips. Enjoy!
