Soba & edamame salad with lime peanut dressing

  • 1 individual packet soba noodles (90g)
  • 1/4 cup edamame beans
  • 2 radishes
  • 1/2 avocado
  • 1/4 cup snow peas
  • Sesame seeds, to garnish
  • Mint, to garnish

Lime peanut dressing:

  • 1 tbsp peanut butter
  • 1 tbsp lime juice
  • 1 tbsp mirin
  • 3 tbsp soy sauce
  • 1/2 tsp maple syrup
  • 1 tbsp water


  1. Cook soba noodles according to package instructions.
  2. Once cooked, rinse under cold water until cool and set aside.
  3. In a small bowl, whisk together peanut butter, lime juice, mirin, soy sauce, maple syrup and water to thin to make the lime peanut sauce.
  4. Cut radish into thin slices
  5. Cut avocado into thin slices
  6. Thinly slice snow peas lengthwise
  7. In a medium bowl, combine soba noodles, edamame beans, sliced radish, sliced avocado, and sliced snow peas.
  8. Toss salad in peanut dressing. Top with sesame seeds and mint. Enjoy!
